Abstract
A newly developed pyruvate selective membrane electrode using plant tissue as biocatalyst is described. Comparison studies of electrodes which employ corn kernel portions as biocatalyst with similar electrodes based on isolated enzyme show that the former achieve longer lifetimes and enhanced activities with no loss of selectivity. This improvement is attributed to stabilization of the biocatalytic activity by the plant tissue matrix.
